Can you provide an example or instruction on how to place the captions for a Bootstrap 5 carousel outside of the image, for instance, underneath the image?

There is no such option. They need to be inside the image in order to be displayed. You can change position of captions with CSS like in this example https://mdbootstrap.com/snippets/standard/d-wajszczuk/3807591#css-tab-view.
